White Flakes In Grounds

The white flakes that you see in your coffee ground are actually Pregamino. After the cherry that surrounds the coffee bean is removed, the bean is still enclosed by a thin, papery shell (like a peanut) that is called Pregamino or Parchment. The Pregamino is removed during the dry milling process. However, a small amount of Pregamino stays in the “fold” of the bean. When you grind the bean, that small strip of Pregamino will look like white flakes.
